Sourdough Rolls

    










Ingredients
1/2 cup + 1 tbsp warm (110-115 F) water
1 tbsp sugar
1 package Red Star Platinum Baking Yeast (2 1/4 teaspoons)
3 large eggs
3 tbsp vegetable oil
1 cup sourdough starter (at room temperature)
1 tsp salt
3-4 cups all-purpose flour (slightly adjust this based on differing starters)


Directions
Mix 1/2 cup warm water with sugar in large bowl.
Sprinkle yeast over water and let rest 2-3 minutes
Add 2 eggs, oil, starter, and salt.  Mix til combined.
Add 3 cups of flour and knead in. 
Add additional flour until dough is slightly tacky (neither dry nor sticky).
Knead until dough feels smooth and springs back.
Place in greased bowl and cover with cloth.
Proof 1 hour (should double)
Divide into 12 balls.
Roll until smooth, then place in 13x9 greased baking dish.
Cover with cloth and proof until doubled again.
Whisk remaing tablespoon of water with remaining egg.  
Brush top of rolls with egg wash.
Bake at 375 for 20 minutes.
