Garlic Sourdough Loaf

   









Ingredients
75 grams sourdough starter
365 grams warm water
480 grams bread flour
40 grams flour
10 grams salt
5 Tbsp minced garlic
100 grams shredded parmesan cheese
2 tsp dried herbs


Directions
Mix together starter and water.
Add flours and salt
Combine with hands to form dough.
Cover & proof  45 minutes.
Mix garlic, parmesan and herbs.
Kneed herb mixture into dough.
Stretch and fold
Proof 30 minutes
Repeat stretch and fold, then proofing 4 more times.
Proof about 6 hours, til doubled in size.
Form into loaf and place in pan.
Proof another hour.
Cover with foil.
Bake at 450 for 20 minutes.
Remove foil and bake 35 more minutes.
Cool before slicing.

Notes
Stretch and fold: Lift the dough up on one side, stretching upward, then 'punch' into center of dough.  turn dough 90 degrees and repeat until done 4 times.
