Cream Cheese Pumpkin Muffins

   








Ingredients
8 oz cream cheese
2 tbsp brown sugar
3 eggs
2 1/4 C flour
1 TBSP pumpkin pie spice
1 tsp baking soda
1/2 tsp salt
2 C sugar
1 C pumpkin puree
1/2 C  vegetable oil


Directions
Blend cream cheese, brown sugar and 1 egg.  Set aside.
Whisk together flour, pumpkin pie spice, baking soda, and salt.
In separate bowl, whisk together sugar, remaining 2 eggs, pumpkin, and oil
Add egg mixture to flour mixture and stir until blended.
Divide batter equally among 24 prepared muffin cups.
Take set aside cream cheese batter and spoon evenly over top center of pumpkin batter by spoonfulls.
Bake 20 - 23 minutes at 350 degrees, until muffins pass toothpick test.
Cool in pan 5 minutes, then transfer to wire rack.
