Ingredients
1 1/2 C cooked white rice
1 C canned black beans, drained
1/2 C canned whole kernel corn, drained
1 C diced tomato
1/2 C shredded cheddar
1/4 C white vinegar
1/4 C oil
1 Tbsp lemon juice
1 tsp chili powder
1 tsp sugar
1 Tbsp diced jalapeno
Directions
Mix rice, beans, corn, and tomato.
Chill in fridge for 20 minutes.
Whisk together vinegar, oil, lemon juice, chili powder, sugar, and chilies.
Pour dressing mixture over chilled salad and stir gently.
Sprinkle with cheese.
