Batter Ingredients
1 2/3 C flour
2 1/2 tsp baking powder
2 eggs
1/2 C sugar
1/2 C unsalted butter
1/4 C milk
1/4 C coffee
1 C sourdough discard
1 tsp vanilla
1 tbsp cocoa powder
pinch of salt
Filling Ingredients
8 oz Cream cheese
3 tbsp sugar
1tsp vanilla
Glaze Ingredients
1 C powdered sugar
3 Tbsp Coffee
1 tbsp cocoa powder
Directions
Cream butter with sugar.
Add eggs, milk, coffee, sourdough discard and vanilla. Stir well.
Add cocoa powder, baking powder, flour, salt. Stir and set aside.
Mix all filling ingredients together and set aside.
Fill muffin cups about half to 2/3 full with batter.
Top with about a tablespoon of the filling.
Bake at 375 for 22 minutes.
Let cool.
Mix powdered sugar with coffee and spoon about 1 tsp on top of each muffin to glaze.
Before glaze hardens, sprinkle with cocoa powder.
Notes
I think switching to mascapone instead of cream cheese may help. The cheese flavor is a bit too strong for what I'm wanting.
