Chicken Spinach Meatballs






Ingredients
1 lb ground chicken
1/2 C frozen spinach
1 egg
1/2 C shredded pepper jack cheese
1 oz cream cheese
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp dried parsley
1 C water
2 Tbsp oil

Directions
Mix all ingredients except water and oil in large bowl.
Roll into 12 balls.
Pour water into Instant Pot and place steamer rack in bottom.
Place meatballs on rack and close lid
Cook on high pressure for 10 minutes.
Natural release for 5 minutes and then quick release.
Rmove rack and meatballs and set aside.
Pour out water and replace Instant Pot
Set Instant Pot to Saute and add oil.
Once oil is heated, add meatballs until browned and crispy.

Notes
When pressure cooking meatballs, you may need to do 6 at a time to make them fit.  Don't layer.
