Buffalo Chicken Meatballs






Ingredients
1 lb ground chicken
1/2 C almond flour
2 Tbsp cream cheese
1 packet dry ranch dressing mix
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 C water
2 tbsp butter, melted
1/3 C hot sauce
1/4 C crumbled feta
1/4 C sliced green onion

Directions
In large bow, mix ground chicken, almond flour, cream cheese, ranch, salt, pepper and garlic powder.
Roll mixture into 16 balls.
Place meatballs on steam rack and add water to Instant Pot.
Close lid, select Meat button, and set time for 10 minutes.
Combine butter and hot sauce.
When timer beeps, remove meatballs and place in clean large bowl.
Toss in hot sauce mixture.
Top with sprinkled feta and green onions to serve.

Notes
Wouldn't blue cheese work better than feta?
