2 C Cauliflower Rice
2 Tbsp cream cheese
1/2 C half & half
1/2 C grated sharp cheddar
1 tsp salt
1 tsp ground pepper
Directions
Locate a heat-proof bowl that will fit in your instant pot.
In bowl, mix all ingredients.
Cover with aluminum foil.
Place normal amount of water in Instant Pot, then add trivet
Set bowl on trivet.
Pressure cook on High for 5 minutes.
Allow natural release for 10min, then quick release remaining pressure.
If desired, remove foil and broil 3-5 min to brown cheese before serving.
