Garam Masala






Ingredients
2 Tbsp coriander seeds
1 tsp cumin seeds
1/2 tsp whole cloves
1/2 tsp cardamon seeds (green or white)
2 dried bay leaves
3 dried red chiles
2 inch piece of cinnamon stick

Directions
Combine all ingredients in spice or coffee grinder.
Grind to medium-fine powder
Store in small jar with airtight lid.

Notes
Dried red chiles may be substituted with 1/2 tsp cayenne or red chile flakes
Keep in cool dry place for up to 3-4 weeks.
