1 C sesame seeds, pre-hulled
2-4 Tbsp Extra-Virgin Olive oil
pinch of salt
Directions
Toast sesame seeds in a wide, dry saucepan over medium-low heat, stirring constantly.
Transfer toasted seeds to a banking sheet or plate and let cool completely.
Add sesame seeds to bowl of food processor
Process until a crumbly paste forms (about 1 minute).
Add 2 Tbsp oil and process for 3 more minutes, stopping to scrape bottom and sides every minute.
Check consistency. Tahini should be smooth, not gritty, and pourable. If needed, process longer or add additional oil, 1 tbsp at a time.
Once tahini is the proper consistency, add salt to taste. Process 5-10 seconds to mix in.
Notes
Toasting process takes about 3-5 minutes. Seeds will become fragrant and turn very lightly colored. If they turn brown, they're burnt.
Tahini needs to be stored covered in the refrigerator.
Will last up to a month.
Generally needs to be stirred at each use.
