Cauliflower Rice






Ingredients
6 C cauliflower
6 C water

Directions
Divide cauliflower into florets
Place half of cauliflower and water in blender.
Pulse a few times until cauliflower is chopped up.
Strain (wire strainer) and set drained cauliflower aside.
Repeat with other half of cauliflower.
Once all cauliflower is drained, steam cauliflower (microwave for 3 minutes or stovetop for 5).
Use in place of rice or noodles.

Notes
Do not overdo pulsing.  You do not want soup.
You split it in half to not overwork/overfill the blender.
Cooked cauliflower should be 'al dente'.  Use caution, it over cooks easily.
Uncooked cauliflower can be stored in refrigerator for 3 days prior to cooking.
