Thin Pork Chops Orientale

Ingredients
1/2 C soy sauce
1/4 C dry sherry
1/4 C salad oil
1 garlic clove, finely choppped
1 tsp ground ginger
1 1/2 lbs thinly sliced pork loin chops.

Directions
In shallow baking dish, for marinade, combine soy sauce, sherry, oil, garlic, & ginger.
Add pork chops to marinade and turn to coat.
Cover & refrigerate at least 4 hours, turning occasionally.
Cook chops until well browned and fork tender, about 10 min, turning once.
Serve with rice.

Notes
Recipe handed down by my Mom. 2 tsp fresh ginger may be subbed for the ground ginger. There's also a recommendation to take chops, marinade, and all, add some carrots and celery and turn the thing into a stir fry, with a little cornstarch to thicken the marinade. It also suggests adding a 4oz can of mushrooms to the rice.
