Cajun Black Beans with Sausage & Corn


Ingredients
2 Tbsp oil
2 minced garlic cloves
1 C frozen pepper & onion stir fry
1 1/2 C frozen corn
1/2 Lb cooked kielbasa/polish sausage, coarsely chopped
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dried thyme
1 1/2 C chopped tomato
1 can (15oz) black beans, drained & rinsed

Directions

Heat oil in large skillet over medium high.
Once skillet is hot, add garlic.
Cook for seven minutes, stirring about every minute.
Add the stir fry mix.
Cook & stir until crips-tender, about 2-3 minutes.
Add corn, kielbasa, salt, pepper, & thyme.
Mix well.
Cook, stirring occasionally, until corn is tender, about 3-5 minutes.
Add tomatoes and beans.
Cook, stirring ocassionally, until heated through, about 3-5 minutes.
