Beefy Cream Cheese Roll-Up
Ingredients
1/2 lb cooked beef, cut into strips
1/8 tsp salt
1/4 tsp dry mustard
4 oz cream cheese
1/4 c mayo
1 tbsp lemon juice
1/2 tbsp chopped pitted green olives
1/2 tbsp chopped pitted black olives
1/4 tsp basil
ground black pepper to taste
8 large lettuce leaves, washed & patted dry
chopped fresh chives
Description
In medium mixing bowl blend beef and salt.
Add dry mustard.
Add cream cheese.
Mix until smooth.
Add mayo, lemon juice, olives, basil, and pepper.
Divide mixture into 8 equal portions.
On a lettuce leaf, lay down a portion of the beef mix, forming a strip lengthwise down the center.
Sprinkle the strip with some chopped chives and roll up lettuce leaf.
Repeat process for remaining lettuce leaves.
