Ingredients
3 medium cucumbers, peeled & seeded
1 tsp salt
1 C heavy cream
1/2 C sour cream
1 tbsp dill
1 tbsp parsley
1 tbsp chives
Directions
Grate cucumber and sprinkle w/ salt to help draw out water
Allow to drain in colander for half hour.
Beat cream until it begins to stiffen
Fold in sour cream and herbs
Press remaining moisture out of cucumber and fold into cream mixture
Chill before serving
