Chicken-Caesar Salad

Ingredients
3 1/2 lb broiler-fryer, skinned & cut into 6 pieces
1/2 C mayonaise
1 Tbsp parmesan
1 Tbsp red wine vinegar
1 tsp worcestershire sauce
1 tsp dijon mustard
1 clove garlic, chopped
1/2 head romaine lettuce, cut into strips
1 red onion, sliced
1 carrot, cut into strips

Directions
Arrange chicken in 13x9 glass baking dish
Cover with plastic wrap and vent.
Microwave on high 13-17 minutes or until chicken is cooked through.
Let stand 10 minutes until cool.
Debone.
In large bowl, whisk together mayo, cheese, vinegar, worcestershire sauce, mustard, and garlic.
Add chicken, lettuce, onion, and carrot.
Toss well.

Recipe handed down by my Mom.  Finally, a caesar without fishy bits!
