Ingredients
1 cup uncooked rice
1/4 cup of oil
1 cup chopped onion (1-2 whole onions)
1 whole chopped green pepper
1 28oz can of tomatoes, whole, undrained
1 1/2 cups of water
1 beef bullion cube (disolved in water listed above)
1 tsp salt
pepper to taste
1 tsp chili powder
Directions
Brown rice lightly in oil in electric skillet
Add onion and green pepper
Saute until onion is transparent
Add remaining ingredients
Simmer covered, over medium heat 20-25 minutes.
Notes
Makes one serving, for a small electric skillet. Only use minute rice if onion and pepper are pre-chopped. Otherwise it burns before you can chop them.
