Smoky Corn Salad

Ingredients
2 C fresh corn kernels
1 C cooked chicken, cubed
1 C smoked Gouda cheese, diced
1/2 C olives, sliced
1/4 C Red Onion, chopped
1/4 C red bell pepper, chopped
1/2 C Mayo
1/2 C Sour Cream
Salt & Pepper to taste

Directions
Steam kernels until tender-crisp.
Cool.
Mix with chicken, cheese, olives, onion, & bell pepper.
In seperate bowl, mix mayo, sour cream, salt, & pepper.
Fold mayo mixture into corn mixture.
Chill overnight.

Notes
Leave the olive out. The flavor isn't worth the calories. Any cheese will do, as will any color of bell pepper or type of onion, though red onion is best.  I just use canned corn, well drained, instead of cooking and cooling fresh.
