Mudgeway Family's Veggie Casserole

Ingredients
1 16oz bag frozen vegetable combination (brocolli, carrots, cauliflower), thawed and drained
1 10.75oz can condensed cream of mushroom soup
1 C shredded Swiss
1/3 C sour cream
1/4 tsp pepper
1 4oz jar diced pimento, drained (optional)
1 2.8oz can french fried onions

Directions
In large bowl, combine vegetables, soup, 1/2 C cheese, sour cream, pepper, pimento, and half the french fried onions.
Pour into shallow 1 quart casserole.
Bake, covered, at 350 for 30 min, or til vegetables are done.
Sprinkle remaining cheese and onions across top.
Bake uncovered 5 minutes or until onions are golden brown.

Notes
Recipe handed down by my Mom. She found this in a magazine - we don't actually KNOW any Mudgeway's, but they submitted it with their name and we grew up referring to it as 'that mudgeway veggie casserole thingy, so the name is here to stay. The instructions also say you can cook this in a microwave - cook on high 8-10 minutes the first round, stiring halfway through. After adding the leftover cheese & onion, give it one minute, or until cheese melts.
