Cheesy Cabbage Casserole

             








Ingredients
1 small green cabbage, chopped
1 medium sweet onion (Vidalia, Walla Walla, etc), chopped
1 stick butter
Salt and pepper, to taste
1 can (10 oz) cream of chicken or mushroom soup
Grated cheddar cheese

Directions
Preheat oven to 350°F
Grease a 9 x 13 baking dish.
Prepare the Cabbage and Onion:
Chop cabbage and onion
Melt 2 tbsp of butter in a skillet
Saute cabbage and onion until tender.
Season with salt and pepper.
In a saucepan, melt the remaining 6 tablespoons of butter over low heat.
Stir in the soup until well combined and heated through.
Place half of the sautéed cabbage and onion mixture into the greased baking dish.
Pour half of the sauce over the cabbage and onion layer.
Repeat with the remaining cabbage, onion, and sauce.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and sprinkle grated cheddar cheese on top of the casserole.
Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve
