Lemon Cheesecake Bites

   









Ingredients

4 two-cracker sheets of graham crackers
3tbsp unsalted butter,melted
8oz cream cheese, room temp
1/4 C sugar
3 Tbsp sour cream
1 egg
1 tsp grated lemon
1/4 tsp vanilla

Directions

Add water to egg bite maker.
Spray inside of silicone cups with cooking spray
Turn graham crackers into fine crumbs.
Mix in melted butter
Mix Cream cheese with sugar, then sour cream, egg, lemon, and vanilla
Fill cups about 3/4 full with cream cheese mixture.
tap on counter to remove any bubbles
sprinkle about 1tbsp of crumbs onto cups, as close to a thin solid layer as possible
cook in egg maker 12min (go 15 if using the big cup)
Unplug and let sit 5min.  Do not remove from egg maker
Run butter knife along outside and then unmold.
Refrigerate for 30min to firm up

Recommend using a paper towel after spraying cups to ensure even coating
Can use 5 double stuff oreos instead of graham crackers and lemon.  Seperate cream from cookie, use cookie as graham cracker.  add Cream to cream cheese mixture.
