Egg Bite Flan

  







Ingredients

4 Tbsp sugar
1 C milk
4 egg yolks
1 tsp vanilla

Directions

In a small saucepan, add 2 tbsp sugar with 1 tbsp water.  Do not stir.
Boil until the sugar mixture turns amber and starts to smell burnt.
Immediately divide the hot carmel among the egg cups
Heat milk to steaming
Whisk together egg yolks, 2 tbsp sugar, and vanilla.
Add milk in slowly, still whisking
Add water to egg bite maker
Add cups to egg bite maker
Add milk/egg mixture to cups, leaving about 3/4 full.
Cook for 14 minutes
Unplug and lift lid.  Wait 2 minutes
Transfer cups to plate and let cool 10 min
Run butter knife around edges and then unmold onto plates.
