Creamy Mushroom Soup






Ingredients
1 lb sliced button mushrooms
3 Tbsp butter
2 Tbsp diced onion
2 cloves garlic, minced
2 C chicken broth
1/2 tsp salt
1/4 tsp pepper
1/2 C heavy cream
1/4 tsp xanthan gum

Directions
Enable saute option on Instant Pot and set heat to Less.
Add mushrooms, butter, and onion to pot.
Saute for 5-8 minutes, until onions and mushrooms begin to brown.
Add garlic and continue to saute until fragrant.
Cancel saute on Instant Pot
Add broth, salt, and pepper.
Close lid and cook on high pressure for 3 minutes.
Quick release, then stir in cream & xanthan gum.
Allow a few minutes to thicken before serving.
