Chile Relleno

Ingredients
6 green chilies
3/4 c. grated cheese
1/4 c. chopped onion
4 eggs
4 tbsp. flour
1/4 tsp. salt
3/4 tsp. baking powder

Directions
Roast and peel green chiles, slit just below stem and remove seeds. Stuff chile with grated cheese and chopped onion, being careful not to tear chile.
To make batter heat 4 egg whites until stiff, set aside. Beat egg yolks until thick. Fold flour into egg whites, add baking powder and salt, fold in egg yolks. Dip stuffed chile into batter, deep fry until golden brown.

From http://www.cooks.com/recipe/wt2dg66v/chile-rellenos.html. Have not yet tried - found this one on the internet and marked it for future reference. Note: Poblano or Anaheim chiles are typically used. Can dice/shred chicken and add to the filling as well.
