Ingredients
1 8oz can tomato sauce
1 c strawberry jam
2 tbsp red wine vinegar
1 tbsp chili powder
1/2 tsp dry thyme
1/2 tsp ground ginger
2 lbs boneless, skinless chicken breasts
salt to taste
3 cups hot cooked rice
1/2 cup thinly sliced green onions
Directions
Combine tomato sauce, jam, vinegar, and spices in 3-quart casserole dish.
Rinse chicken and pat dry.
Add chicken to sauce and turn to coat.
Bake in 400 ovn, basting occasionally, until meat is cooked.
Season to taste with salt.
Lay chicken on bed of rice.
Cover with sauce and onions.
