Seasoned Mushrooms

Ingredients
1 lb mushrooms
1/2 C olive oil
2 cloves garlic, minced
1 tsp salt
1/8 tsp pepper
1/2 tsp dried thyme
1 tsp grated lemon zest
1 bay leaf
1 1/2 tbsp lemon juice
1/4 cup white vinegar
chopped parsley

Directions
Rinse mushrooms and pat dry
Heat olive oil in a frying pan over medium heat and cook mushrooms for 3 min, stirring constantly
Add garlic, salt, pepper, thyme, lemon zest, bay leaf, lemon juice, and vinegar
Stir constantly for 3 min, then remove from heat.
Transfer contents to a glass bowl and refrigerate overnight.
Top with parsley and serve cold.

The vast majority of calories come from the olive oil here.  I wonder if it's possible to find another way to cook these?  Maybe steam them with the rest of the stuff or something?
