Mock Stroganoff Stew
Ingredients
2 tbsp butter
1 large onion, sliced
1 large clove garlic, peeled & diced
3 lbs beef stew meat, cubed or top round steak, cut into strips
8 oz mushrooms, sliced
1 tsp black pepper
1 C burgundy cooking wine
1/2 C ketchup (lowest carb you can find)
1/2 C sour cream
Directions
Melt butter in skillet & cook onions and garlic until tender, about 5min.
Place onions & garlic in crock pot
Add meat to skillet and stir until brown on all sides, about 5min.
Add mushrooms and black pepepr and cook another 5min.
Stir into the onions.
Cook in crock pot all day on low, or half a day on high, until meat is tender.
Add burgundy, ketchup, and sour cream. Heat through.

from Back to Protein, pg 146. The Burgundy can be replaced with 1/2 C of vinegar & 1/2 C of grape juice.
