Low-Carb Mushroom Soup


Ingredients
1 C water
1 lb mushrooms, cleaned & sliced
1 tbsp olive oil
1/4 C heavy cream
1/4 C parmesan
black pepper to taste

Directions
Bring water to boil in a saute pan.
Add mushrooms.
Boil slowly 4-5 min
Drain & puree in a blender, adding olive oil & cream
Empty into a bowl and stir in cheese and pepper to taste.
