Tea Cakes

Ingredients
6 tablespoons sugar
2 eggs, well beaten
1/2 cup sifted all purpose flour
1/2 teaspoon nutmeg
Oil for pan 3/4 inch deep

Directions
Beat sugar and eggs together well.
Sift flour and spice and add to the mixture.
Add more flour if necessary.
Put oil in pan.
Heat pan to 375 degrees.
Grease a teaspoon by dipping into the heated oil.
Spoon up some of the batter, and drop into pan.
Repeat, dipping sppon each time.
Turn when cakes rise to top, and continue frying until brown on both sides.
Spoon out with slotted spoon, and drain on paper towels.

Notes
Cooking time: 2-4 minutes. Yield: 24 small cookies.
