Pickled Peppers


Ingredients
1 C vinegar
1 1/2 C sugar
1/2 C oil
1 Tbsp salt
3 cucumbers, sliced
2 bell peppers, sliced
1 onion, sliced & rings seperated

Directions
Combine vinegar, sugar, oil, and salt in pot.
Heat over medium-low, stirring often, until sugar is completely dissolved.
Place cucumbers, peppers, and onion in large jar.
Cover with hot vinegar mixture.
Let cool, then cover and refrigerate.

Notes
I've done this with other veggies too.  Carrot and green beans hold up well.
