Ingredients
3 lbs small red potatoes
1/2 lb thinly sliced pastrami
1/2 lb green beans, fresh
3 green onions
1 Tbsp olive oil
1/2 C mayo
1/4 C milk
2 tsp white vinegar
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
Directions
Halve unpeeled potatoes and boil in water until fork-tender.
Drain water.
Cut pastrami into 1/2 inch wide strips.
Trim green beans.
Thinly slice green onions.
Boil green beans until tender-crisp and drain.
Saute green beans, green onions, and pastrami in oil until lightly brown and tender, stirring occasionally.
In large bowl, whisk mayo, milk, vinegar, basil, salt, and pepper.
Add potatoes and pastrami mixtures.
Toss well.
