Ingredients
1 head lettuce
1 small head cauliflower
1 lb ham, diced
1 small red onion
2 C mayo
1/3 C parmesan cheese, grated
1/4 c sugar
salt & pepper
Directions
Break lettuce in small pieces in large bowl.
Seperate and slice cauliflower.
Arrange cauliflower on top of lettuce.
Layer ham over cauliflower, then red onion over ham.
Mix remaining ingredients together and pour over top of salad.
Refrigerate overnight.
Toss immediately before serving.
Notes
The original recipe called for bacon in place of ham, but I prefer this. I love this recipe, and I hate cauliflower! I cannot see lunch meat working in this in place of ham, but you should be able to easily replace the sugar with splenda.
