Lofthouse-Style Frosted Sugar Cookies






Ingredients

Cookies:
1/2 C unsalted butter, softened
3/4 C sugar
1 large egg, room temperature
1/3 C sour cream
1 tsp vanilla extract
1/8 tsp almond extract
1 3/4 C flour
1 1/2 tsp cornstarch
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cream of tartar
1/8 tsp salt

Frosting:
1/2 C unsalted butter, softened
2/3 tsp vanilla extract
2 1/5 C powdered sugar
pinch salt
2-3 Tbsp heavy cream
food coloring & sprinkles as desired

Directions

Cookies:
Cream butter with sugar.
Mix in egg.
Mix in sour cream and 1 tsp vanilla.
In seperate bowl, combine flour, cornstarch, baking soda, baking powder, cream of tartar, and salt.
Whisk dry ingredients into wet.
Refrigerate 1 hour.
Preheat oven to 375 degrees.
Line two baking sheets with parchment paper
Remove half of dough from fridge.
Divide into 1 Tbsp sized pieces and roll into round balls
Place on parchment paper and use the bottom of a glass to press and evenly flatten
Bake 9-13min, until just turning golden brown
Remove from oven and cool completely on the sheet.
Repeat with other half of dough.

Frosting:
Cream butter.
Add salt, vanilla, and then 2 C of powdered sugar
Add heavy cream 1 tbsp at a time, then add rest of powdered sugar until consistency and taste is as desired.  You may not use all of the extra powdered sugar.
Color frosting if desired.

Once cookies are completely cool, remove from trays and frost.
Decorate with sprinkles if desired.
Allow frosting to set, then move to air-tight container.

Notes
Lofthouse is a brand of frosted sugar cookies.  These taste pretty close.  They need to sit a day or two to let the frosting finish hardening completely.  For flattening, I used a drinking glass with a flat bottom and a piece of wax paper under it to prevent sticking.  Recipe makes about 24 cookies.
