Fruitcake


Ingredients
2 C Golden Raisins
2 1/2 C All Purpose Flour
1 tsp baking soda
2 large eggs
1 jar (27oz) mincemeat
1 can (14 oz) sweetened condensed milk
2 C of candied fruit

Directions
Preheat oven to 300 degrees F
Cover raisins with Hot water and let soak for 5-10 minutes, then drain.
Mix all ingredients
Spoon into heavily greased pan(s)
Bake 1 hr 45 min, until toothpick comes out clean

Notes
May want to line pans with greased parchment paper
Do not use citron, dyed fruit, or plain raisins. A mix of raisins is okay.
Recommended fruit is cherries and pineapple; mix to taste.
Suggested storage is to wrap in a non-fuzzy dishtowel, drizzle a few tablespoons of brandy or fruit juice across cake every other day to keep moist.
