Cheddar Baked Potato Skins


Ingredients
4 large russet potatoes, scrubbed
2 teaspoons olive oil
1/2 teaspoon smoked paprika
Salt and freshly ground pepper, to taste
1/2 cup finely grated Cheddar cheese

Directions
Preheat the oven to 400 degrees F.
Using a paring knife, peel the potatoes in approximately 1-inch-thick strips, reserving 1/8-inch of flesh with the skins. On a baking sheet, toss the potato skins with the oil, smoked paprika and salt and pepper. Place them skin-side-down and bake for 15 minutes. Sprinkle the skins with the cheese and bake an additional 10 minutes, until the edges are crispy.
