Hungarian Chicken Paprikash


Ingredients
1/4 C olive oil
2 cloves garlic, minced
1 3lb chicken, cut into pieces
salt to taste
pepper to taste
1 1/2 tbsp paprika
1 bell pepper, sliced into rings
1/2 lb mushroom caps
1 C sour cream

Directions
Heat oil in large saucepan over medium heat.
Add garlic and saute about 3min
remove pan from heat.
sprinkle chicken with salt and black pepper and add to pan with paprika and half the green pepper.
cover pan with tight fitting led and cook over very low heat.
After 30min of cooking, add mushrooms
Continue cooking until chicken is tender, an addl 15min or so
For even cooking, turn chicken occasionally.
If liquid begins to disappear, add a few spoonfuls of water to prevent sticking
When chicken is thoroughly cooked, transfer to a heated platter, continuing to heat liquid over medium heat.
Scrape bottom of pan to loosen any burned-on bits.
Add only enough water to achieve a thick, gravylike consistency
Remove from heat.
Stir in sour cream until smooth.
Pour mixture over chicken and garnish with remaining green pepper.
Serve immediately
