Ingredients
1 C Oats
1 1/2 C water
1 1/2 C brown sugar
1 stick + 6 Tbsp margarine
1 tsp baking soda
2 tsp vanilla
1 C white sugar
2 eggs
1 1/2 tsp salt
1 1/2 C flour
1 tsp rum extract
1 C raisins, plumped
1/4 C milk or cream
1 C nuts
1 C coconut
Directions
Bring water to a boil and mix in oats.
Set aside and let stand 20 minutes.
Mix together 1 C brown sugar, 1 stick margarine, baking soda, 1 tsp vanilla, sugar, eggs, salt, flour, rum extract, and raisins.
Add oatmeal and mix well.
Bake 35-40 minutes at 350 degrees.
While cake is baking, mix together remaining margarine, remaining brown sugar, remaining vanilla, milk, nuts, and coconut.
When cake is removed from oven, pour on topping.
Place under low broiler flame until coconut browns.
