Ingredients
2 16oz cans sweet potatoes
1/2 tsp salt
1/2 c milk
1/2 C butter
1 C sugar
2 eggs
1/2 tsp vanilla
1 C brown sugar
1/3 C flour
2tsp cinnamon
1 C chopped pecans
Directions
Drain & mash sweet potatoes.
Add 1/4 C melted butter
Mix sugar, milk, salt, vanilla, and slightly beaten eggs.
Add mixture to sweet potatoes.
Pour into a 9x9 ungreased baking dish.
Mix brown sugar, flour, remaining butter, and cinnamon until crumbly.
Stir in chopped pecans.
sprinkle brown sugar/pecan mixture over sweet potatoes.
Bake at 350 for 40 minutes.
Notes
Recipe handed down by my Mom. Can use 3 1/2 C cooked & mashed sweet potatoes instead of canned - just skip the drain/mash step.
